Inspiring the Uninspired Cook: Weeknight Dinner Series - Idea #1




In our family I have the responsibility for all the weekday meals. Breakfast, lunch, and dinner, five days a week, fifty-two weeks a year, with different likes and dislikes. Yikes!

The good news is that I love good food and eating healthy. The bad news is I don't love cooking. A bit of a conundrum.


This blog series is dedicated to the weeknight dinners that inspire me to cook. Any idea I share in this series will be:


Chicken Burgers



One of the best investments I made this year was joining #platejoy. It's a terrific resource to get recipes that are designed to fit your lifestyle (www.platejoy.com)

The recipe I used was an adapted version of PlateJoy's Parmesan Cilantro Turkey Burger.

A burger packed with cilantro is a non-starter with the kids, so I eliminated the cilantro and substituted ground chicken.

  • 2 tsp minced garlic

  • 1 cup shredded Parmesan cheese

  • 4 eggs

  • 1/4 cup olive oil

  • 3 lbs ground turkey or ground chicken

  • 1/2 - 1 cup bread crumbs (whole wheat or gluten-free)

  • Salt & pepper to season

  • 8 hamburger buns

  • Toppings of your choice

The prep time (ingredient round-up, assembling, making the burger patties) took me 20 minutes for 1 dozen burger patties. I can easily get my kids involved in prepping this recipe next time.


I used brioche buns to add a bit more of a gourmet factor and served a simple green salad to round out our meal.


The "Deluxe" is topped with red onion, sliced avocado, sliced tomato, mustard, and mayo.


The "Keep it Simple" is topped with ketchup, mustard, and avocado slices.


The "Deconstructed" is just that. I can't convince my daughter to eat things together.
