Welcome back to my weeknight dinner series. These blog posts are for uninspired cooks - those of us who don't love cooking but love food and eating healthy. I will be posting ideas for weeknight dinners that inspire me to cook. Any idea I share in this series will be:


Slow Cooker Chicken Lo Mein


One of my strategies is to pick a weeknight meal in my meal plan that I can easily prep on a Sunday. It's great coming home on a Monday night having dinner ready to go and start off my week this way. It keeps me motivated to cook the rest of the week! What I like about this recipe, is that I can substitute the veggies based on what will work with the rest of my meal plan for the week. I will be blogging about my meal plans in upcoming blog posts....stay tuned.


Tip: Minimize your prep time by buying veggies pre-cut so that you have very little chopping to do.

This first step takes no more than 10 minutes. I whisk together the sauce ingredients and buy chicken fillets to again minimize the time I spend cutting and prepping food. The recipe can be cooked on a high or low setting depending on how much time you have.


After removing the cooked chicken, I throw in my pre-cut veggies and cook my noodles on the stove. Another variation I have tried, is to put my noodles with the veggies in the crock pot. I didn't do this here, because the broccoli and cauliflower take up a lot of volume. But when I used bok choy this worked out really well.

Monday night is served! My kids are still not super adventurous to eat the ingredients in this dish all together. They are tasting all the flavours of this dish, but I accommodate by serving the ingredients separately on their plates. Baby steps towards well-rounded eaters.


This is a slightly different version of the same dish. I used baby bok choy instead of broccoli and cauliflower. I also had pork tenderloin I wanted to use up, so it was substituted for the chicken fillets. This came out incredibly tasty as well.
