Garlic Chicken and Broccoli Cashew Stir Fry
This meal is absolutely perfect for a quick, healthy, and tasty week night meal. The project manager in me can't help but assess a recipe for what I can plan and prepare for in advance, to ensure my weeknight cooking goes as smoothly and successfully as possible. With this recipe, I cut up the chicken the night before, as well as, combine all the ingredients for the sauce. This takes 10 minutes tops. By doing this, I set myself up to feel motivated that cooking this will be few short steps and I will have a scrumptious meal to serve my family.

1/4 cup soy sauce
3 garlic cloves, minced
3 tbsp brown sugar
1 tsp sesame oil
1 lb chicken, cut into bite-sized pieces
3/4 cup chicken broth, divided
1 tsp cornstarch
3 cups fresh broccoli florets
1 cup cashews
sliced green onions for garnish
The chicken and the sauce go into a skillet over med-high heat and are cooked for about 3 minutes or until the chicken is no longer pink.
Add 1/2 cup of chicken broth to the skillet with broccoli and cashews. Cook covered until broccoli is tender. About 3 - 5 minutes. In the meantime, mix 1/4 cup of chicken stock and cornstarch. Add this mixture to the skillet and continue to let everything simmer until the sauce has thickened.
I like to serve this dish over jasmine rice. My hubby always add a little sriracha sauce to complete his dish.
My kids version: 'the deconstructed stir fry'. Broccoli and chicken is from the stir fry, and I just separate the ingredients on the plate. I also give them a bowl of uncooked cashews and a yummy serving of rice.
